Zucchini, Goat Cheese and Orzo Salad
4 oz. package of Coach Farm® Fresh with Dill Goat Cheese
softened to room temperature
1 large zucchini
1 large yellow squash
1/4 cup of green scallions
Salt and pepper
1 tbsp. of olive oil
1 1/2 cups of dry orzo
1 tsp. of fresh dill chopped

Cook orzo according to package directions. While orzo is cooking add olive oil to a saute pan on medium heat. Saute zucchini, yellow squash and scallions until tender. Toss vegetables with cooked orzo, dill, crumbled Coach Farm® Fresh with Dill Goat Cheese, salt and pepper.

Serves 2
