Shrimp, Spinach, Arugula and Basil Salad with Goat Cheese

Shrimp, Spinach, Arugula and Basil Salad with Goat Cheese
1/4 lb. of Coach Farm® Fresh with Pepper Goat Cheese, room temperature
12 jumbo shrimp, prepared to your liking
1 red bell pepper, roasted
1/3 cup of pine nuts, toasted
1 lb. of spinach, stemmed and torn
4-6 oz. of arugula
1 bunch of basil
1/2 cup of olive oil
1/4 cup balsamic vinegar
1/4 tsp. of salt
1/4 tsp. black pepper

Prepare shrimp to your liking (grilled, broil, fried, etc). In a saute pan, heat oil and vinegar until very hot. When vinegar starts to boil, add in the pine nuts, salt and pepper. Prepare you greens by tearing them into bite-sized pieces and toss in large salad bowl. Add the hot dressing over the salad and let the greens wilt for 30 seconds. Place shrimp on top and garnish with roasted red peppers and Coach Farm® Fresh with Pepper Goat Cheese. Serve immediately.
