Shrimp and Epiros Feta Sauté
Ingredients:
3 cups of peeled tomatoes
1/3 cup of olive oil
1 large yellow onion, chopped
1 clove of garlic, finely chopped
1 green pepper, cut into small cubes
1 tsp sugar
Pinch of Salt and pepper
1 lb of shrimp, peeled and deveined
Pinch of sweet paprika
Pinch of dried parsley

Makes: 4
Prep: 30 mins
Bake: 1 hour, Oven at 400°F

1. Preheat oven to 400°F
2. Cut tomatoes into small cubes
3. Heat 3 tbsp of olive oil in a sauce pan and sauté with onion, garlic and green pepper for 2-3 min. Add in tomato, sugar and salt and pepper. Allow the mixture to boil for m until the sauce thickens and most of the liquid has evaporated
4. In a separate sauce pan, heat the remaining olive oil and sauté the shrimp for one minute. Add the tomato sauce mixture and cook until shrimp are done
5. Top with Epiros Original Feta Cheese and transfer dish to a plate
6. Sprinkle on sweet paprika and parsley
7. Serve with pasta or rice
