Roasted Red Pepper Omelet
1 small onion, chopped
1/2 cup Legendairy® Gold Chevre Goat Gouda, grated
1 tbsp. Cambria Goat Butter
4 eggs
2 oz. Roasted Red Peppers, chopped

Heat skillet on medium high heat. Melt butter. In a small bowl break eggs and season with salt and pepper. Beat eggs with a fork or wire wisk. Add onions to skillet - sauté until gold brown. Add roasted red pepper to skillet. Combine Gold Chevre Goat Gouda into small bowl with eggs and stir. Pour in the beaten egg mixture and cover the pan. Cook over medium-low heat for about 3-5 minutes, until the bottom is golden brown and the top is set.

Serves 3
