Herbs, Prosciutto and Melone Crostini

Herbs, Prosciutto and Melone Crostini
2 baguettes, sliced into 1/2 inch slices
1 cup olive oil
Sea salt and pepper
1 cantaloupe - cubed small or 1/2 inch slices
1 lb. of prosciutto
1 container of Coach Farm® Herbs de Provence Spread

Preheat oven to 350 degrees. Line a sheet pan with parchment paper. With a pastry brush, lightly brush baguette slices with olive oil. Lay on the prepared sheet pan. Season to taste with salt and pepper. Bake for 5-7 minutes, or until golden brown. To assemble, spread Herbs de Provence cheese spread evenly on each of the crostini. Place a small piece of prosciutto on each of the crostini, then 1 small cubes (or small slice) of cantaloupe. If you prefer, garnish with fresh cracked pepper. Serve immediately.
