Broccoli Salad with Hollandse Creme

Broccoli Salad with Hollandse Creme
3 cups of small broccoli florets
1/4 cup of chopped red onion
1/2 cup of grape tomatoes, halved
1/2 cup of slivered almonds or pine nuts
6-8 oz. of Uniekaas® Hollandse Creme cut into 3/4" cubes
1/8 cup of extra virgin olive oil
1/3 cup of red wine vinegar
1/4 tsp. of sugar
1/4 tsp. of black pepper
Salt to taste

Cook broccoli in boiling, salted water for 1 minute. Drain well and rinse with cold water. Drain well again. Combine the broccoli with onion, tomatoes, nuts and Uniekaas® Hollandse Creme. In a small bowl, whisk together oil, vinegar, sugar, pepper and salt. Pour over salad mixture and lightly toss to coat.

Serves 4
