Talari is to Messinia, what Hallourni is to Cyprus. Made by hand using traditional methods, this 100% sheep's milk cheese is known for its higher-than-normal melting point, making it perfect for grilling and frying. The flavor is rich and creamy, offset by a delicate saltiness and subtle mint undertones. For centuries, mint was used as an aromatic in the Talari process and today, the cheese makers of Talari continue the tradition by adding in bits of mint to each piece of cheese.
